Today I was at a loss for what to eat for lunch. Ever have those days when nothing seems appealing? I was tired of the usual line up and wanted something that was light and refreshing. It is close to 100 degrees where I live today so I definitely didn't want anything too heavy. But what? THAT was the question. So, I had some of these 100 calorie sandwich thins that looked interesting. I decided to put a little cream cheese on them (yum) because isn't everything better with cream cheese? I ended up using a very small amount because I didn't have the reduced fat kind. Oh well!
Then I used up the rest of my strawberries on one side and put some raspberries on the other.
DEEE-licious!
It was just right! And I got at least a serving of my daily fruits and veggies. whoo-hoo! I think that next time I will make this for the kids as well. It would probably be easier to make them regular sandwich style rather than open-faced if you are serving them to the kiddos though, so that the berries don't end up on the floor instead of their mouths!
In other news - my son's 3rd birthday (I can't even believe it!) is coming up and we are having a train theme. I love checking out Pinterest for all kinds of fun ideas! I am going to attempt to bake and ice a 3-D train cake.
Should be interesting!
